In the great confusion of production styles of CACIOTTE from half of Italy, only one stands out for its production regulations, historicity, and territoriality: Casciotta d'Urbino DOP.
Milk: 80% sheep - 20% cow, matured for 30 days.

2st Stage: MONTE CONERO COAST
Portonovo wild mussel + Paccasassi of Conero
“The Gold of the Conero”. Forbidden to call it MUSSEL! Mòsciolo is the maximum expression of symbiosis between Flora and Fauna. Always attached to the rocky cliffs of Monte Conero, they reproduce wildly. Only a handful of men can fish them.
No farms. Only Mother Nature. (Pot cooking at low temperature)
An ancient variety of wild sea fennel has almost disappeared from the rest of the planet. Last stronghold: Monte Conero. So deeply rooted in the history of this area that it has a name of its own: Paccasassi. Term coined due to the spontaneous growth of this rare "land algae" from the natural fissures of the rock.
3st Stage: MACERATESE HILLS
The Artichoke of Montelupone
Extremely low yield (half compared to Roman dialect); small and tapered; great aromatic intensity; absence of fluff and spines; very soft texture; 100% Organic. These are the characteristics that have made it a rare gastronomic pearl. Worthy of a Slow Food Presidium.
4st Stage: ASCOLI PICENO
